Value - Eggplant


World production is 35 million tonnes per year. World production is very concentrated. China is the top producer with 20 million tonnes per year. The second producer is India with 10 million. The third producer is Egypt with a little over 1 million. As you can see India and China are definitely the most important countries in the eggplant industry.
US produces eggplant and even export some of it, mainly to Canada. The industry is valued at 11 million dollars. Georgia is the state that produces the most in the US. However, the US also import a lot eggplant: the imports are valued at over 50 million (mainly from Mexico).

Eggplant costs in average about a dollar per pound in the US and around 1,90 per kilo in France.

To produce one hectare (up to 20 tonnes are produced per hectare) it takes around 400 hours of labour. The most time consuming process is the harvest that takes about 200 hours of work.
In France, the cost of production of one hectare is around 2500 Euros before wages are paid and around 8000 Euros once the wages are paid.
The production starts in April and ends in August.
